More and more evidence suggests that we truly "are what we eat" as research confirms that the right diet can lead to a healthier life. Recently, scientists have focused on the effects of vitamin C and folate in the diet. Research indicates that vitamin C is a powerful antioxidant, which may block the activity of highly unstable molecules of oxygen, called "free radicals," that may raise the risk of certain types of cancer and heart disease. In fact, the U.S. Food and Drug Administration (FDA) has stated that diets low in fat and high in fruits and vegetables containing antioxidants (vitamin A and vitamin Q and fiber) may reduce the risk of certain types of cancer and heart disease. |
